My name is my signature
I was born and raised surrounded by the aromas of the restaurant industry; after graduating from culinary school, I chose to specialize at the Accademia Pizzaioli. It was here that I had the honor of meeting my mentor, Enrico Famà.
From there, I continued my training at the Pizza News School, earning the title of Pizza Instructor and refining my technique through industry competitions.
In 2021, I was recognized as a World-Class Starred Pizza Maker, and the following year, I earned three stars from the Peperoncino Rosso guide.
I have taken my pizza across Italy, gathering the essence of Sicilian and Tuscan flavors and blending them with the richness of the Friulian region.
My signature is more than just a name: it is the hallmark of a journey built on passion, recognition, and a constant pursuit of excellence.

After years of experience throughout Italy, Giovanni Mascari, together with Stefania, took on his greatest challenge:
opening his own restaurant.
Here, his passion for pizza meets creativity and gastronomic excellence, combining Sicilian and Tuscan flavors with the finest local ingredients from Friuli. A place where tradition and innovation merge, and where he can finally share his unique vision of Pizza d’Autore with the public, celebrating the flavors that have defined his journey.
